My husband and children would happily eat oatmeal every morning, sandwiches every lunch and pizza every dinner. every. single. day. But I would go insane. And probably spend the evening foraging for something to satisfy my bored tastebuds.
So I think I've figured out a meal plan with enough structure to be easy to plan around, and enough flexibility that I won't get bored. We'll try it out for a while and see how it goes. I plan to be pretty consistent with the breakfasts and lunches, but the dinners may see some variance from the schedule.
Sunday:
Breakfast: Muffins
Lunch: Baked Potatoes or Twice-Baked Potatoes
Dinner: Snack (Pizza Sticks, Cheese Fries, Nachos, etc.)
Monday:
Breakfast: Quiche
Lunch: Sandwiches (PBJ, Grilled Cheese, Tuna Melts, etc.)
Dinner: Pasta (Spaghetti, Lasagna, etc.)
Tuesday:
Breakfast: Oatmeal
Lunch: Pasta or Rice (Mac & Cheese, Tuna Bake, Pasta Salad, a Rice-Cooker Casserole)
Dinner: Chicken (chicken curry, chicken pot pie, chicken soft tacos)
Wednesday:
Breakfast: Dutch Puff (with syrup, fruit, or compote)
Lunch: Tortillas (Wraps, burritoes, chalupa, quesadillas)
Dinner: Meat (Meatballs, Pork Chops, Ginger Beef)
Thursday:
Breakfast: Eggs (Omelets, Scrambled eggs, egg bake, fried egg sandwiches, egg mcmuffins)
Lunch: Muffin Tin Lunch (I found a pile of 6-cuppers at Dollar Tree for $1 each.)
Dinner: Hot Sandwiches (Cheesesteaks, Sloppy Joes, Burgers, Pulled Pork)
Friday:
Breakfast: Smoothies and Toast (PB, Cinnamon or Jam)
Lunch: Beans (baked beans, chili, beans & rice)
Dinner: Pizza & Movie Night
Saturday:
Breakfast: Pancakes (plain, oatmeal, blueberry, chocolate chip or waffles or french toast)
Lunch: Soup and Bread (or biscuits or rolls)
Dinner: Sabbath Meal ("homestyle" - turkey, chicken, roast, meatloaf, etc.)
Great plan. I love the variety since my tastebuds get bored also.

RICE COOKER CASSEROLE??? Please share! I can hardly stand it this is so exciting! And I thought oatmeal in the rice cooker was awesome...a casserole too!?! YES!!
