Like most things this year, Groundhog Day snuck up on me. I certainly wasn't as prepared as last year! But I seem to have a knack for "making do", so a few minutes in the kitchen produced these Groundhog Sandwiches for lunch...
(It's peanut butter and honey, in case you were wondering... with green sugar for the grass, and sprinkles for flowers. The "groundhog" is just an extra piece of bread, cut out with a funny little bear cookie cutter I had, that I placed between the pieces of bread in the sandwich and added mini chocolate chips for eyes, and a red mini chip for a nose.)
And as a treat, I let them eat their lunch while watching the movie "Groundhog Day", then we looked up the report from Punxatawney, PA...
Though our little sandwich buddy up there appears to have a shadow, Punxatawney Phil did not. The official groundhog says "Early Spring." Sam is SO disappointed. He's still waiting for "3 feet of snow."


I think Sam might have to move to the midwest or further east to get that 3 feet of snow :) I was wondering where all the snow we were supposed to get went, it was supposed to be one of the WORST winters in a long time here but instead, we have had fantastic weather (I'm not complaining mind you :) )
